So before we start, I will clarify what's up with this term 'palta' in today's recipe title. Because I suppose most of you are not familiar with this word.
A palta can also be described with the word 'avocado'. But the chilean people do not call an
avocado 'avocado', they call them 'palta'. And because my mom is from Chile, I always say palta.
With that being said I was hopefully able to erase any irritation and now we will deal with one of the most amazing things I know: Exactly, food.
This simple pasta dish ist easily done in a short amount of time and perfect for anybody wanting something healthy and tasty to eat and it being satiable at the same time.
We start with heating the water for the noodles and putting a bit of salt in it.
Tip: Instead of needing a lot of time by making the water boil on the stove, you can save time by boiling it in an electric kettle. (Of course only if you have one.)
After the water started boiling, you fill it into a pot or if you have already heated the water in a pot on the stove, turn down the stove's temperature a bit so that the water stops boiling.
Now you add the whole amount of noodles to the water. This time I decided to use fusilli made out of lentils to increase the dish's healthiness-factor. I highly recommend tying these to convince people who say that there is no such thing as healthy, tasty food... But of course you can use completely normal noodles too.
Let the noodles simmer for eight minutes on low heat. While you wait for the noodles to get ready you can start heating the olive oil in a pan. After the noodles are done pour the water off an add the noodles to the oil in the pan.
Now feel free to flavour the noodles like you want with pepper, herbal salt, rosemary and oregano.
Blend and sizzle everything for a little until the noodles are crunchy and golden-brown coloured and then the time has already come to put them on a plate.
Before the dish is complete we have to deal with the eggs. Again you put some olive oil into the pan and add either one egg at a time or all of them together. Some minutes later you can take them and arrange them on top of the noodles.
Finally you halve the palta and cut one half (the one without the pit) crosswise in slices with a width of ca. 1cm. After that, take a teaspoon and 'plane' (similar to when you want to eat a kiwi) the palta altogether out of its husk. The created 'pasta-slices' now can be e.g. draped fan-shaped upon your noodles and eggs.
Finish everything off with grained pepper and pine nuts.
As you can see this dish is really easy to make and even looks aesthetically pleasing.
