Pancakes. Who does not love pancakes?

Who is not eager to find THE pancake recipe?  

I for my share did find my recipe and thought, after finally taking a good pancake picture, it's time to share my recipe and make other people happy.

Before I start telling you how to make the most amazing pancakes, I want to tell you how I happen to gain access to such precious knowledge.
I believe it was about five years ago when I was meeting a good friend of mine. We wanted to make pancakes and she brought this recipe with her and told me, it's from her grandmother and grandmothers are as it is well-known the queens of cooking.   
I am positive that after trying this recipe everybody doubting that, will be proven otherwise...

Okay then, let's start.


You'll need for 8-10 pancakes:

ca. 20 min of your time

150g flour
60g sugar
1 tsp backing powder
1 pck. vanilla sugar
175ml milk
1 egg
some rapeseed oil 


To start you'll need a bowl and a scale. Combine all dry ingredients in the bowl.
(If you want a very smooth dough, feel free to sieve the flour.)

After that take the wet ingredients, eggs and milk, whisk them with a an egg whisk in measuring jug and add the egg-milk-mixture to the remaining ingredients in the bowl.
Stir everything until you have a nice, smooth dough.

Try this out: At this point you are welcome to add ca. 250g blueberries to create tasty blueberry pancakes.

Now we will move on to the stove.
Take a pan and add some rapeseed oil. In the beginning, turn the heat on the stove up to its highest level to heat the oil fast. (Tip: Place a plate next to the stove, where you can put the pancake after they're done.)
If the oil is heated, you add about a half scoop of dough into the pan.

Now we wait. Every now and then you can check on the pancakes with a spatula, if the pancakes have already gained their crunchy, golden-brown looks.
When the time has come, flip the pancake and bake his other side.

Before creating the rest of the pancakes, turn down the heat on the stove. Otherwise the oil heats too fast and the pancakes easily turn black.

After you used all of the dough, you can level the pancakes and combine them with fruits, marmalade, nutella or be classic and only add sugar and cinnamon!
