
I thought it's time for another recipe!
Two weeks ago I visited Portugal and they do have THE best papayas, for real.
So my family and I made lunch and I was in charge of creating that day's salad. I thought let's be creative and do a fancy salad with papaya.
No sooner said than done. In my opinion this fruity accent adds a freshness to the salad creating what I would call summer vibes.
Therefore this salad has the honor to wear the extraordinary name: 'a salad for summer'.
To create this salad you'll need (for 2-3 persons):
15 min of your time
1 iceberg lettuce
1/8 papaya
ca. 30g manchego-cheese
some olives (without stones)
cashews
juice of a freshly pressed lemon
some olive oil
salt
pepper
oregano
After that you can take the papaya, get rid of its pits and cut it into little cubes.
Do the same thing with the cheese.
The olives are cutted into slices and after that you can add them together with the other already prepared ingredients, cashews and chopped onions (that's optional) to the bowl with the salad.
Finish off with some olive oil and lemon juice as well as salt, pepper and oregano!
